Keptas ledų (!) tortas


Aš kaskart suklūstu vien išgirdusi žodį ledai. O jūs? Saldus, šaltas, gaivus ir nuodėmingas desertas nepalieka abejingų nei mažų, nei didelių.

Šį ledų torto receptą pastebėjau vartydama mėgstamą itališką receptų žurnalą. Mane labai sudomino netikėta KEPTŲ LEDŲ (!) idėja. Ir ne veltui. Šis tortas yra vertas pagyrų. Jis drėgnas, aromatingas, gaivus ir labai labai skanus. Jį rekomenduoju visiems ledų mėgėjams (ir ne tik).

Ice cream cake  
Keptas ledų tortas su morengu

Porcijos: 6-8 porcijos
Trukmė: apie 1 val. 30 min.

Kalorijos: apie  335-445 kcal/ porc.
Ingredientai:
350 g vanilinių grietinėlės ledų 
50 ml kiaušinių likerio (galite pakeisti kitu mėgstamu likeriu) 
50 ml vandens 
4 šaukštai cukraus 
Biskvitui
4 kiaušiniai 
150 g cukraus 
150 g miltų 
1 šaukštas vanilės ekstrakto 
žiupsnelis druskos 
Morengui
3 kiaušinių baltymai 
100 g cukraus pudros 
žiupsnelis druskos

Pirma iškepkite biskvitą. 
Orkaitę įkaitinkite iki 180 °C temperatūros. 
Kiaušinius plakite su cukrumi, vanilės ekstraktu ir žiupsneliu druskos, kol gausite balkšvą ir purią masę. 
Suberkite persijotus miltus ir atsargiai išmaišykite. 
Išardomos kepimo formos (maždaug 26 cm skersmens) dugną išklokite kepimo popieriumi, suverskite plakinį, pašaukite į orkaitę ir kepkite apie 20-25 minutes. 
Biskvitą atvėsinkite ir supjaustykite maždaug 1 cm pločio juostelėmis. 

Likerį sumaišykite su vandeniu, įberkite 4 šaukštus cukraus ir maišykite, kol ištirps.
Imkite keraminį kepimo indą (taip pat tinka vienkartinės dekoratyvios kepimo skardos), jo dugną sudrėkinkite likerio mišiniu ir išklokite biskvito juostelėmis. Palikite nedidelius tarpelius nuo vienos juostelės iki kitos ir jas klokite viena kryptimi (t.y. išilgai arba skersai kepimo indo). 
Biskvitą dar kartą apšlakstykite likerio mišiniu ir ant jo viršaus užtepkite storą ledų sluoksnį. Tada vėl klokite biskvito juosteles. Jei prieš tai klojote skersai kepimo indo, dabar pakeiskite kryptį ir klokite išilgai. Biskvitą sudrėkinkite likusiu likerio mišiniu, užtepkite likusius ledus ir padėkite į šaldiklį, maždaug 40 minučių, kad aptirpę ledai vėl sukietėtų. 

Paruoškite morengų plakinį: kiaušinių baltymus pirma išplakite su žiupsneliu druskos iki standumo. Tada sudėkite cukraus pudrą ir plakite kol masė taps blizgi. Šį plakinį sukrėskite į konditerinį maišelį su dantyta galvute. 

Orkaitę įkaitinkite iki 200°C temperatūros. Pasirinkite kepimo ant grotelių (griliaus) režimą. Iš šaldiklio išimkite ledų tortą, jo paviršių skubiai papuoškite morengo “pagalvėlėmis“, pašaukite į orkaitę ir kepkite, kol morengo paviršius paruduos (vos 3-5 minutes). 

Tortą galite patiekti skubiai, tokiu atveju ledai dar bus skysti ir gaivūs. O jei norite "stabilesnio" deserto (kad tirpstantys ledai nebėgtų), prieš patiekiant, tortą palaikyti (keletą valandų) šaldytuve, kad ledai susigertų į biskvitą.

Baked ice cream (!) cake with meringue 

Servings: 6-8 portions  
Duration: about 1 hour and 30 minutes
Calories: about 335-445 kcal / port. 
Ingredients: 
350 g of vanilla ice cream 
50 ml of egg liqueur (you can substitute other favorite liqueur) 
50 ml of water 
4 tablespoons of sugar 
For the sponge cake
4 eggs 
150 g of sugar 
150 g of flour 
1 tablespoon vanilla extract 
a pinch of salt 
For the meringue: 
3 egg whites 
100 grams of icing sugar 
a pinch of salt

First bake the sponge cake.
Preheat oven to 180 ° C temperature. 
Beat the eggs with the sugar, vanilla extract and a pinch of salt until white and fluffy. Add the sifted flour and stir gently. 
Take a loose base baking shape (about 26 cm in diameter), line it with a baking paper, pour in the batter, place in the oven and bake for about 20-25 minutes. 
Cool it and cut into 1 cm wide strips

Mix the liqueur with the water, add 4 tablespoons of sugar and stir until dissolved. 

Take a ceramic baking dish (can also use disposable aluminum baking pans), moisten the bottom with some spoons of the liqueur mixture and line on sponge strips. Leave small gaps from one strip to the other, and line them in one direction (e.g. along or across the baking dish/pan). Moisten the surface of the strips with some liqueur mixture again and spread on a thick layer of ice cream. 
Then, start to line the remaining sponge strips. If before you lined them across the baking dish/pan, now change the direction and line along the baking dish/pan. Moisten the sponge cake with the remaining liqueur mixture, spread the remaining ice cream and place the dish in the freezer for about 40 minutes. 

Prepare the meringue batter: beat the egg whites first with a pinch of salt until stiff. Then add the icing sugar and beat until the mixture is glossy.  Put the batter into the baker's bag.
Preheat oven to 200 ° C temperature using a grill mode. 
Take the cake out of the freezer, decorate the surface rapidly with the meringue batter, place in the oven and bake until the meringue is browned on the surface (only for 3-5 minutes). 
Cake can be served quickly. In such case the ice cream will still be liquid and fresh. But if you wish more "stable" dessert (that melting ice cream wouldn't be running), I would suggest to keep the cake in the refrigerator for few hours before serving that to ice cream would get absorbed by the sponge cake.

Torta al gelato
Porzioni: 6-8 porzioni 
Durata: circa 1 ora e 30 minuti

Ingredienti
350 g di gelato alla vaniglia 
50 ml di liquore all'uovo (o qualsiasi altro di vostro gradimento) 
50 ml di acqua 
4 cucchiai di zucchero 
Per il pan di spagna: 
4 uova 
150 g di zucchero 
150 g di farina 
1 cucchiaio di estratto di vaniglia 
un pizzico di sale 
Per la meringa: 
3 albumi d'uovo 
100 grammi di zucchero a velo 
un pizzico di sale 

Prima cuocete il pan di spagna. 
Preriscaldate il forno a 180 ° C di temperatura. 
Sbattete le uova insieme allo zucchero, all'estratto di vaniglia e ad un pizzico di sale fino ad avere un impasto bianco e spumoso. Aggiungete la farina setacciata e mescolate delicatamente. 
Prendete una tortiera apribile (circa 26 cm di diametro), ponetevi della carta da forno, versate l'impasto, mettete in forno e cuocete per circa 20-25 minuti. 
Al termine della cottura, lasciate raffreddare e tagliate delle strisce di 1 cm di larghezza. 
Unite il liquore con l'acqua, aggiungete 4 cucchiai di zucchero e mescolate fino a completa dissoluzione. 
Prendete una pirofila (o una teglia di alluminio usa e getta), inumidite il fondo con qualche cucchiaio della miscela di liquore e collocate le strisce di pan di spagna. Lasciate delle piccole fessure tra una striscia e l'altra e allineatele tutte in una direzione (ad esempio lungo o attraverso il tegame). 
Inumidite la superficie delle strisce ancora con un pò di miscela di liquore e spalmatevi sopra uno spesso strato di gelato. Allineate poi le strisce di spugna rimanenti. Questa volta invertite la direzione rispetto a quella del primo strato. 
Inumidite il pan di spagna con la miscela di liquore restante, spalmate il gelato rimanente e collocate in freezer per circa 40 minuti. 
Preparate l'impasto per la meringa. 
Montate gli albumi a neve con un pizzico di sale. Quindi aggiungete lo zucchero a velo e sbattete fino ad ottenere un composto omogeneo. 
Mettete l'impasto nella sac à poche. 
Preriscaldate il forno a 200°C di temperatura in modalità grill. 
Prendete la torta dal freezer, decoratene la superficie rapidamente con l'impasto della meringa, mettete in forno e cuocete fino a quando la meringa è dorata in superficie (solo per 3-5 minuti). 
La torta può essere servita rapidamente. In tal caso il gelato sarà ancora liquido e fresco. 
Ma se si vuole un dessert più "fermo" (senza far sciogliere il gelato), suggerisco di tenere la torta in frigorifero per qualche ora prima di servire per far sì che il gelato venga assorbito dal pan di spagna.

Ačiū ačiū. Beje, šis biskvitas labai skanus. Galima jį panaudoti ne tik šiam tortui, bet ir kitiems. Sulaistyti likeriu, pertepti grietinėlės ar jogurto kremu, vasarą paskaninti šviežiomis uogomis. Mmmmm
